Recipe of the Week
2/4/2012 Fritatta Our corn bread goes well with this dish.
Cook 1/4 lb. sausage or bacon. Cook 2 potatoes, cool, peel off skin and dice into bite size pieces. In a skillet saute' potatoes with 3 tbl. butter, 1/4 C. diced onion, dash of pepper, parsley, dill weed, 1/4 C. sliced mushrooms and broccoli. Cook till 3/4 tender. Set aside. When ready to finish dish, beat 4 eggs and pour over potato mixture. Sprinkle with grated parmesan cheese. Be sure the pan/potato mixture is hot when you pour the eggs in.
