6/28/2008 Mango Bread 3 eggs, 2 C. sugar, 1 C. vegetable oil, 1 tsp. vanilla extract, 8 oz. softened cream cheese, 2 C. all purpose flour, 1 tsp. baking soda, 1 tsp. baking powder, 1 tsp. cinnamon, 1 tsp. salt, 1/2 tsp. ground nutmeg, 2 C. chopped walnuts (optional), 2 C. chopped mango. Heat oven to 350. Grease and flour two 9x5 inch loaf pans or seven 5 3/4x3x2 foil loaf pans. Beat eggs, sugar, oil and vanilla till smooth. Beat in the cream cheese. In another large bowl, wisk flour, baking soda, baking powder, cinnamon, salt and nutmeg. On low speed gradually beat into the egg mixture. Fold in mango and walnuts. Divide mixture among the baking pans. Bake 60 minutes for large and 35 minutes for smaller pans. Allow to cool in pan for 10 minutes on a wire rack then turn out of pans and allow to cool completely.
